Here, in the sacred heart of Cholula, tradition is not just remembered—it is tasted, shared, and celebrated.

Bienvenido a Casa: Welcome to La Norberta
Welcome. Bienvenido. We say these words with the deepest sincerity because La Norberta was born from a desire to create more than just a restaurant. We envisioned a home—a relaxed and unpretentious place where laughter flows as freely as the craft beer, where conversations echo with the warmth of friendship, and where the spirit feels nourished alongside the body. We are a sanctuary from the presumptions of the outside world, a place to gather, to connect, and to simply be.
Our soul and our story are woven into the very ground we stand on: the sacred, vibrant heart of San Pedro Cholula. This is not just any town; it is a place of living history, a city that has pulsed with life for over 2,500 years, making it one of the oldest continuously inhabited settlements in the Americas. It is a city of a hundred churches built upon the foundations of a hundred pyramids, a place where the spiritual energy of the past coexists with the vibrant creativity of the present. When we say we are in the heart of Cholula, we mean we are custodians of its spirit. And we promise that when you come and share a meal with us, you will remember the unforgettable taste of home—el sazón de hogar—a flavor that is as much about memory and love as it is about ingredients.
At La Norberta, we believe in the simple, profound joys of life. We are a restaurant with a good palate and a refined, yet rustic, taste. Our bar is a testament to the masterful spirits of Mexico, a place where you can drink good, honest pulque, smoky and complex mezcal, and innovative craft beer from local artisans. And our floor? It’s a space for celebration. We invite you to dance whenever the music, the moment, and the mezcal move you! This is your space to celebrate life’s daily victories and cherished milestones.
Our History: Roots in a Sacred Land
To understand La Norberta, one must first understand Cholula. Our story doesn’t begin with the laying of our foundation, but thousands of years ago, when ancient peoples chose this fertile plain to build one of the most magnificent cities of the ancient world. The Great Pyramid of Cholula, known as Tlachihualtepetl, stands just moments from our door. It is not merely a ruin; it is the largest pyramid by volume ever built, a man-made mountain constructed over centuries by cultures from the Olmecs to the Toltecs and the Aztecs. Each layer of this pyramid tells a story of devotion, of community, and of a deep connection to the cosmos.
Upon this ancient pyramid, the Spanish conquerors, in their quest for dominance, built a church: the Iglesia de Nuestra Señora de los Remedios. This act, repeated all over the city, created the unique skyline of Cholula—a visual tapestry of Mesoamerican foundations crowned with colonial baroque architecture. It symbolizes a history of conflict, resilience, and eventual synthesis. This is the energy that permeates Cholula. It is a place of profound resilience, where ancient roots were never severed but instead grew intertwined with new traditions, creating a culture that is uniquely Poblano.
La Norberta was founded with this history in our hearts. We are not a colonial-themed restaurant, nor are we a pre-Hispanic relic. We are a reflection of the Cholula of today: modern, creative, and deeply proud of our complex, layered heritage. Our name itself, “Norberta,” is traditional and strong, evoking a sense of grandmotherly wisdom and care. It represents the matriarchal heart of the Mexican kitchen, the keeper of recipes passed down through generations.
We chose this location in the Jesús Tlatempa neighborhood, on 6th Street North, to be a part of the city’s living, breathing pulse. We are surrounded by artisans, by families who have lived here for centuries, by the scent of incense from nearby churches and the aroma of corn cooking on a comal. Our walls are infused with these stories. When you step inside, you are stepping into a space that honors this legacy, not as a museum piece, but as a living, evolving story that we now share with you.
From Our Kitchen to Your Soul: The Philosophy of Our Food
Love is born from sight, and we invite you to take a look into our kitchen—the soul of La Norberta. It is here that our philosophy comes to life. Our cuisine is unapologetically and proudly inspired by traditional Mexican cooking, with a special reverence for the culinary treasures of Puebla. This region is a gastronomic paradise, a place where indigenous ingredients, colonial Spanish influences, and convent secrets blended over centuries to create dishes of breathtaking complexity and flavor.
We believe that the best food begins with the best ingredients. We have forged deep relationships with local farmers and producers in and around Cholula. The volcanic soil of this region, enriched by the majestic Popocatépetl, gives us access to some of the most flavorful produce in Mexico. Our cooks, the true artists of La Norberta, celebrate this bounty. The corn for our tortillas is sourced from local growers who cultivate ancient criollo varieties, each with its own distinct flavor and texture. The chiles we use—the smoky ancho, the rich mulato, the fiery pasilla—are the holy trinity of mole Poblano, and we select them with the care and respect they deserve. Our tomatoes, onions, cilantro, and epazote are often harvested just a day before they arrive in our kitchen, bursting with a freshness you can taste.
But ingredients alone do not make a meal. The magic ingredient, the one you cannot buy, is the good humor and love of our cocineras. They are the bearers of tradition, women whose hands and hearts hold the secrets of their mothers and grandmothers. They don’t just follow recipes; they cook with intuition, with a pinch of this and a handful of that, tasting and adjusting until the dish sings with perfect harmony. Their laughter is the seasoning that elevates every plate. The sizzle of the pan, the rhythmic patting of tortilla dough, the slow simmering of a rich mole—these are the sounds of our kitchen, the heartbeat of La Norberta.
This food, seasoned with joy and history, is then served at your table by our friendly and attentive staff. They are not just servers; they are storytellers, ready to share the origin of a dish or recommend the perfect mezcal pairing. At La Norberta, you will not just have a delicious meal; you will partake in a rich and flavorful tradition, served with a genuine smile.

The Bar: A Pilgrimage of Mexican Spirits
Our bar is a curated shrine to the liquid soul of Mexico. We believe a good drink can tell a story, transport you to a different time and place, and elevate a meal from great to unforgettable. We have dedicated ourselves to offering a refined and authentic selection that honors the masterful artisans behind each bottle.
Pulque: The Drink of the Gods
Long before the Spanish arrived, pulque was a sacred beverage in Mesoamerica. Made from the fermented sap of the agave plant, known as aguamiel, it was consumed during religious ceremonies and by the elite. Today, it is a symbol of rustic, authentic Mexican culture. We source our pulque from trusted local tlachiqueros who practice the ancient art of harvesting the aguamiel without harming the magnificent maguey plant. Served fresh, our pulque is vibrant and complex, a true taste of the Mexican countryside. We invite you to try it pure or as a curado, blended with natural fruit flavors.
Mezcal: Smoke, Earth, and Spirit
Mezcal is not just a drink; it is an embodiment of the earth from which it comes. Unlike its more famous cousin, tequila, mezcal can be made from dozens of varieties of agave, each offering a unique profile of flavors and aromas. We have traveled through the valleys of Oaxaca and the mountains of Puebla to bring you a collection that speaks of terroir and tradition. From the smoky, bold flavors of an Espadín to the wild, herbaceous notes of a Tobalá, each mezcal on our shelf is a work of art. We celebrate the maestros mezcaleros who roast the agave hearts in earthen pits, crush them with a stone tahona, and distill the spirit in small copper or clay pots. When you sip a mezcal at La Norberta, we encourage you to do so with respect—besitos, or little kisses—to savor the incredible complexity that generations of wisdom have placed in your glass.
Craft Beer: The Local Revolution
Cholula is a hub of creativity, and that extends to its brewing scene. We are proud champions of local and regional craft breweries that are redefining Mexican beer. Forget the mass-produced lagers; here you will find innovative brewers using local ingredients like hibiscus, coffee, and local fruits to create bold IPAs, rich stouts, and crisp ales. Our craft beer selection is a rotating tap list of the best and brightest brewers in Puebla and beyond, offering a perfect, refreshing counterpoint to the rich flavors of our cuisine.
